Kale chips… pizza flavored are actually my documented favorite (for years and years!). However, last week I decided I’d try a pesto version. It’s not really much of a recipe—you’ll have to taste them to make sure you have enough flavor/ingredients based on the size/amount of your kale chips.
Zesty Pesto Kale Chips
4 kale leaves (tear into “chips”)
2 Tbsp pesto
1 Tbsp oil (I used toasty walnut oil)
1 Tbsp balsamic (I used a tuscan balsamic)
1-2 Tbsp parmesan cheese
Massage all ingredients into the leaves, and coat well. Dehydrate for several hours on 115 degrees.
These are awesome! You could probably just leave out the balsamic if that doesn’t appeal to you—I only had 2 Tbsp of pesto left so I added that in to make them more coated (and the balsamic adds the “zest!”).
News/Notes: This week has been awesome so far–the weather is practically perfect in Santa Monica right now. My only complaint is that I wish it would get light outside a little earlier in the morning so I could go out there even earlier! I’m getting used to the sleepy morning vibe here—people seem to sleep in. But I also love the feeling of being out on the pier or in the park with just a few other early risers. It’s like we have this secret club—people inside sleeping have no idea what they’re missing! Tomorrow I plan to ride my bike south on the path by the beach and just see how far I can go in an hour or so.
I’m super loving coffee lately too, but I really miss my Finger Lakes Coffee Roasters flavors.
Today I’m thinking of heading over to the top of Santa Monica Place to work–there’s free wi-fi, and if it’s warm enough in the sun (supposed to be high 70’s), then I can be working without feeling like I’m cooped up inside! Tonight I’ll do yoga—Jen Pastiloff’s Manifestation Yoga class is my favorite. She’s super funny too, and an amazing writer. I feel like I’m just cruising through the week—I have been really focused on work and that feels good. I keep hearing about how cold it is in NY (7 degrees?!), and I really can’t picture that at all… Being warm is definitely not overrated!

if I lived in in Cali or anywhere warm, I would definitely rise early too! It looks so peaceful just looking at your photo, I can’t imagine what it really must feel like!
I am loovvving coffee lately too. It just takes me to this state of pure relaxation! These kale chips look delicious!
Ok that kale sounds fantastic. I gotta remember this. And the skies look gorgeous. BTW – I’m going to be in LA at the end of April….
