This feels like a random combination of content for a post, but I’m pretty sure if I don’t just talk about it all in one post, something will get neglected later…
Yogi Clothing
I was sent some great stuff by the company to try out and wear… and I want to show it to you! I loved every single thing they sent me (yes, it was free, and yes this is totally my honest opinion about it).
So that’s the red thermal zipper hoodie, the white cargo pocket pants, and the jade long sleeve tunic dress (I can’t find the last one on the Yogi Clothing website right now–must be they’re out?).
The clothes I received are awesome quality, and I really like all of them. I may not wear the tunic dress as a dress too often–it’s more my style to wear it scrunchy with pants rather than with the leggings, belt, and boots, but it definitely seems to work that way too! The pants are linen, and I like how they tie in the back so I don’t get them all grungy by walking on them (it would be inevitable—I have short legs!).
And just in case you’re wondering… the belt is from Anthropologie and the boots are Frye Paige Tall Riding Boots in grey. And the sunglasses are Tom’s Maverick in silver/white/orange.

Grilled Cheese
I made grilled cheese for Scott last night. I am always slightly hesitant and anxious about introducing my recipes to people who haven’t had weirdo ingredients like coconut flour… But he’s willing to try (and I had a backup idea if he didn’t like it).
Here’s how I did it this time:
Coconut Flour Flatbread
(Black Pepper and Parmesan with Colby Jack and Garlic)
2 eggs
2 Tbsp coconut flour
1/4 cup heavy cream (or any milk–half and half is my fave to use)
2-4 Tbsp parmesan cheese (I just dumped this in)
3-4 dashes of ground black pepper
2 dashes sea salt
Mix well until smooth. If it’s super runny, let it sit for a minute to thicken. If it’s super thick, add a little more liquid (your coconut flour, the liquid, and the size of your eggs will determine the thickness). It should be like thick pancake batter, kind of pourable but pretty thick so you need to use a spoon to pour/scoop and smooth it into the shape/size you want. Add a couple tablespoons of butter or coconut oil to your skillet (on medium low), and when it’s melted add batter in four equally sized pancakes. I used coconut oil for this step. When the bottom is browned, flip your flatbreads and smear roasted garlic onto two of them. Add cheese to the two flatbreads that have the garlic on them, and add the lids with the un-done side facing up. When the bottom is browned, flip each sandwich to finish the last side and melt the cheese. Before you flip the last time, you may want to add more coconut oil or butter to the pan. I added Kerrygold herb butter.
Side note: I’ve been obsessed with roasted garlic lately, and have even been known to eat it plain… So I wanted to use it for this sandwich too. I roasted a head of garlic and then removed and mashed the cloves into a paste. When the first side of the bread was done and I flipped it, I spread the garlic mash onto the bread before putting the cheese on top.
For this particular sandwich, I used colby jack cheese (which I think complemented the garlic wonderfully)—it was the first time I had used this cheese with the flatbread and it was really good!
Obviously, you can change this sandwich up to have whatever flavors you like. I honestly think Pizza Flavored Grilled Cheese is my fave!
News/Notes:
I’m happy to say I bought some mugs (I was drinking my coffee out of an empty coconut oil jar before… I know, ridiculous and hot to hang onto!).
I chose the Le Creuset mugs (I got two) in their new color, Marseilles. This may not seem like a big deal, but it’s the basis for how I’m going to finish accessorizing my kitchen. Next on my list are pans, a butter dish, and the tea kettle in this color. And if you’ve looked at the price tags on this stuff, you’ll know why I’m just adding one thing here and there till it becomes a collection… I could buy cheaper stuff, but I want this and I’m in no rush.
Also, I used some of the money I got for Christmas to buy myself a new one of these….
In case you don’t know what it is… I’ll explain later! I upgraded to the stainless steel version (my old one got left in NY so my Mom or someone who wants it is getting it as a hand-me-down).
And one final note:
This is why I love kids. Uggs, mismatched pj’s, and a fancy belt. Sometimes I look similar to this when I go to the grocery store… I know, it’s not cute on grown-ups!
I don’t make New Year’s Resolutions—they make me crazy. Actually, I think I may have done it last year (I wasn’t going to weigh myself for a year), but I only made it a few months. I don’t know why, but resolutions sound negative to me–I don’t want to resolve myself to do something that is good for me. I want to set goals and make plans that feel positive that I won’t be required to use willpower for (because I know I’m bad at it!).
Once I make some goals, I’ll share them!

this coconut flatbread sounds so SO good – you know it has been in my list for some time, I WILL be making it soon. the grilled cheeses you make always look so dang good.
I have several goals right now, but they just happen to coincide with the new year, I am not really one to proclaim resolutions either. I’ve got some big challenges ahead of me, though – and they are all exciting!

So I’ve been out of the blogging loop for a little, but I have been meaning to comment on how I am so happy that you are dating Scott. He sounds like an awesome guy, based on the sole fact that he is open to trying different foods! I can’t lie and not say how I have been wondering how that coffee date went. It already looks like California is treating you well. I hope you are enjoying every moment (which I know you are). Happy New Year Lisa, I hope it’s your best year yet!!! 🙂

wondering if there is a healthy substitute for the eggs in this recipe? i don’t do pysllium husks and I know that is a common sub. also, do you use regular powdered Parmesan or do you buy a cheese block of it and grate it yourself?
I’ve never gotten an egg-free version of this to work… but I wouldn’t totally rule it out either. I’ve tried with flax and chia, and it just doesn’t hold together and get fluffy the same way. My hesitation with psyllium husk (which may not be a real issue) is that it would increase the fiber content, and coconut flour is already about 60% fiber… that’s a lot of fiber!
I usually buy the freshly grated parmesan cheese and use that… but grating it would be good too!
