Amazing Grain Free Brownies (with two secret ingredients)!

I love my friends, and we have a great time together, but we don’t have food in common. I used to fit in better and make the most fabulous party food, and also cookies. I would go on cookie baking sprees and then give them all away to the people in my life. Then I started to feel guilty because everyone was dieting, but they liked the cookies so they’d eat them anyway.

I’ve also wellness coached in places where someone brings in baked goods all the time, and the other people have this love/hate relationship with the situation. Everyone complains to me about it, but they aren’t quite to the point where they’d tell the baker to stop (because baked goods really are yummy!).

My other party specialties used to be brownie bites (mini brownies with a cream cheese whipped cream piped frosting) and buffalo chicken wing dip (with an entire pound of cream cheese and a jar of Marzetti’s Blue Cheese dressing—or ranch, depending on the crowd. It also had an entire jar of hot sauce and 2lbs of shredded chicken in it…men tend to flock around it and lick the crockpot when it’s gone…).

Today? I can’t make things like that. Number one, because I can’t eat it—and I always feel the need to taste test things I’m making. Number two, because I feel a moral obligation, as the person with the PhD in health and more nutrition info than I know what to do with, to set a good example and promote wellness.

Even though most people from my past (i.e. hometown) just think I’m eating differently than they do because of health issues (which is one reason for it), I like eating clean organic unprocessed foods. It makes me feel good, mentally and physically. Many of you will agree with me, but maybe you can picture all the people in your lives who eat the Standard American Diet and see nothing wrong with it… and how they’d react to a hummus platter with veggies to dip…or lettuce wraps with avocado and homemade salsa inside.

Recently, I went to a party with friends and took brownies as my dish to pass. These were not just any brownies—they were gluten free (and egg and peanut free too!). I was slightly skeptical about how they’d turn out, but they ended up being amazing.

Please make them. And take them to a party… See if anyone says anything to you–I had a few people gushing over them, but also a few people who didn’t say anything at all (so maybe they liked them…or hated them!).

The Recipe (I got the idea here and adapted it):

In a bowl, blend the following:

1 12oz. jar of Dark Chocolate Almond Butter (or 12oz any nut butter plus 1-2tbsp cocoa powder)
8oz creamy sunbutter
7oz canned pumpkin
1 tbsp coffee or espresso powder (optional)
1/4 – 1/2 tsp sea salt
1 tbsp vanilla
1 cup chocolate chips
1 cup maple syrup  (I use Grade B)
1 tsp baking soda
2 eggs (it works with chia eggs too)

Mix all ingredients thoroughly (I used a KitchenAid stand mixer, but you could use your muscles if you don’t have one! If you use the mixer, it’s best to put the chocolate chips in last).

Bake in a greased 9×13 baking pan for 50 minutes at 350 degrees. It could have possibly come out a little sooner…but I was busy and forgot about it… This pan of brownies definitely needs to cool in the pan or it will just be goop if you try and cut remove them right away. Once cooled, I removed brownies from the pan and put them in a container in the fridge, without layering any…they would have stuck together. Chewy and dense. I thought about frosting them, but they really didn’t need it!

I’ve concluded a couple things from this. I’m going to stop experimenting when I’m taking food to other people’s houses. It stresses me out too much. I’m also going to try harder not to care if people think I’m crazy because of how I eat. I love how I eat.

I’m officially back from vacation, and working mostly from home now. So, I have PIP 3 coming up—and it’s a good one!  (Think: rebounding, infrared sauna, yoga…and cultured veggies!). I also have a few beautiful food pics to show you from Florida, but I’ll save those for a seafood post.

Slash when I brought a quinoa dish to the Ball dinner this past weekend, everyone said they “loved my cous cous dish” and asked what I put in it. HA, like I was going to tell them that there was hempseed oil, apple cider vinegar, and agave nectar in it.

  3. great brownie recipe, lisa!! yes – they don’t look lacking at all without frosting!
    i would NOT experiment AT ALL when taking a recipe to a party. i have little confidence when it comes to cooking/baking anyway, so tried ‘n’ true is where it’s at – also, i am more comfortable with desserts, so i usually take cookies or brownies.
    it’s a great week so far because it’s about 95 degrees out and I. Love. Heat. I am such a happy camper!
    your ideas for future posts are fun! i just bought stevia today…doesn’t mean i couldn’t use more! and i’ll look forward to PIP 3. Glad you’re on summer schedule, now!

  4. Thanks for sharing the recipe! I’ve made brownies using almond butter before, and while I loved them, others thought they were “weird.” ha! Anyways, your’s look really good and I agree about not caring what people think in regards to what I eat. The food I eat does me good 🙂

    i have seen that recipe from elana and wondered how it would be with sunfl seed butter bc unlike everyone else, i dont “love” AB.  I much prefer Pb or SFSB but worry that Pb would be too pronounced.  love that the SFSB worked well.  wonder how it would work exclusively?

    the avg person doenst care or “get” all the work involved in vegan or gf treats so i dont bother for a a crowd of mainstreamers.  nor do they care about food like foodies do so most dont think we’re crazy..and if they do, look at what they eat.  that’s crazy.

  8. My friends are the same way, I am the only “clean” eater in our group and sometimes  they give me slack for it. I don’t care either way because like you said, I LOVE the way I feel from the foods I eat and I love the way they taste! These brownies make me drool, and I need to find out where these parties that you bake for are held, because I will sneak in and eat my heart out! I say wave that crazy flag loud and proud because you never know, you just might find someone who is so impressed by the healthier alternatives that you change their eating habits too!

    Hi Lisa!  I hear ya about the flag wavin’!  My friends already think I’m weird so I proudly wave my flag!  ha!  Now, they look forward to see what I bring as my dish to pass…some are takers, some are not.  Many have been blown away at the fact that it’s a “raw” dish AND it tastes good!  🙂

    Everyone always assumes I will bring healthy, “different” foods to potlucks and parties, so lately I’ve been doing the opposite 🙂  Yep, I’m through with trying to please others with my healthy cooking, because many times I just waste the food.  Now some groups are different, and I know who those groups are.  Over the weekend I made a delicious quinoa salad and a watermelon salsa, which was loved by ALL!  Then for dessert I made brownies and served regular ice cream (huge hit).  I still experiment on my own, like you said, but when cooking for others I stick to what they know best, unless I know it’s something I’ve made before.

  12. I’m really not a fan of almond butter at all either (I thought I was the
    only one!)…but the dark chocolate AB doesn’t taste almond-y at all so I
    cheated by using that instead of adding cocoa to the sunbutter. In my head
    it made sense—I was saving the rest of the SFSB to just eat with a spoon
    🙂 I’m pretty sure I’m going to try the SFSB only version this weekend….I
    don’t see why it wouldn’t work!

Remember, not everyone from your hometown thinks you are crazy!  If I had the determination that you have (and the funds to back it) I’d be eating a whole lot more like you do.  As it stands, I’ll stick to my organic spring mix and crazy amounts of avocados.  🙂  Those brownies look awesome and I was reading about coconut syrup the other day- it definitely sounds like a good experiment to me!

If you can’t try new creations on your friends and family members, who can you experiment on? I have a few really good (crowd tested) recipes that I bring to people’s houses – that way I KNOW I will have something to eat 😉  I’ve never cared what people think about my choices in food (or anything…). Perhaps because I grew up VERY skinny and had to listen to insensitive people talk about it all the time – I developed a thick skin and a compassionate nature??

    I WILL be making these brownies… one of my very favorite things and these look delicious!

    you are Bridget.” After I saw that, I decided that if it was a problem for
    me to be and do what is right for me, then the people who have the problem
    probably don’t really belong in my life! I do have to remind myself of it
