I woke up yesterday morning feeling deprived and restricted, which was totally irrational because I hadn’t even started PIP yet…and PIP is not all that restrictive. I immediately wanted to break into Joe’s raisin bread and make toast. With butter. Which I don’t even eat when I’m not doing PIP.
I chugged a glass of water, made tea and juice, and settled into my new routine. I’m glad I did!
Coincidentally, or not, this week my nutrition students are tracking their dietary intake for 4 days in Spark People online, and they’ll have to analyze it later. Several of the females in the class keep asking me if I will just tell them what I eat, which is sort of awkward but I suppose I should be flattered. I finally agreed that I would track my intake for 4 days too, and for those people who are interested, they can check it out. Wait till they see the crazy things I eat!!!! I already told them about the green smoothie—1 head of romaine, 1 huge handful of spinach, water, cacao, and stevia… I know they are going to think I’m crazy, but I’m thinking of it as exposing them to new ideas.
Anyway, my intake for Day 1 and so far for day 2 is at just under 1500 calories. The online program tells me I have too much fat (avocados and nuts…not french fries and butter!) and not enough protein or carbs. I think will boost the protein, but I’m ok with lower carbs and higher fat. I don’t trust that the government knows what’s best for me nutritionally anyway. Calorie-wise, I don’t think it’s much different than normal.
Do you try and meet the daily recommendations for macro and or micronutrients?
I was going to eat tons of salads, but let’s face it, I’m drinking more salad than the average person eats. So I’m trying to be more creative (and thus, hopefully, satisfied).
Since I finally broke the ice and bought Miso for my super bowl spinach artichoke dip (a la Gena at Choosing Raw), I wanted to make more things with it. Gena uses it very often in her recipes, and I’ve been reading-but-not-trying them for over a year…


The next one was today…


I followed Gena’s recipe, except I used stevia instead of agave, nixed the basil (because I didn’t have any), traded red pepper for snap peas, and added garlic. I also sprinkled hemp seeds and nutritional yeast on it, but I’m not sure that was necessary (or noticeable). It was awesome! I have half of the sauce left, so I am going to get another zucchini and make it again tomorrow.
Last thing.
I’ve been noticing a lot of people posting about dessert hummus and cookie dough hummus…so I tried it, but I went the stevia method to keep things as sugar-free as possible. It was not good. Have you tried it yet?

So far, I’m liking PIP, and having my checklist helps me do everything—I don’t want to end the day with things un-checked!
Do you like veggie-based pastas? I’ve found if they’re room temp, they’re much better (kinda like sushi!).
Collard wraps? Are you a fan? How about cultured veggies? I’m planning to make a batch soon, but I wish someone would help me—I’m much more productive and less messy with it when I have help!
I really liked veggies pastas when I was eating them consistently. 🙂
I too found that when I put in my food for the first few weeks of my raw eating that they found that I was eating too much fat (avocados and nuts..lol) I ignored it. 🙂
I've been seeing a lot of those collard wraps lately. Not sure about the taste but they look just gorgeous!

As for veggie based pastas, spaghetti squash is one of my favorite things EVER. So fun to make and serve, and gluten free, too!
I agree about the government not knowing what's best for my body — I actually LOST weight when adding more good fats into my diet!
That pasta looks fantastic. I really want a spiralizer. I think I might make more veggie pastas if I had one to make it look prettier 😉 I've not tried collard wraps as I have a slight fear of greens being bitter. It took me forever to try kale….I know, silly.
I used to eat collard greens all the time, but I've never made a wrap out of them. They would really be the perfect wrap though!
gosh, it looks so nourishing. I don't really follow the guidelines either. I know that my body works better with fat/protein and moderate carbs. But everyone's body is so different, ya know?

hmm….not sure if i'm completely conscious of my macro/micro nutrients, but i try to eat an array of colored vegetables (especially spinach!) and fish because it's so healthy for you. that wrap looks super yummy. is it weird i've never had collard leaves before??
Your veggie pasta looks delicious!! Anything with zucchini and I'm sold. I don't think I'm overly conscious about nutrients, but I do try to be balanced as much as I can.
I always get too much fat, too- but I am fine with it- it works for me!

ok, there are so many ideas in this post to try! like…veggie based pastas. collard wraps, even green smoothies (although i don't really like drinks…i'd probably eat it with a spoon like soup!)
good for you for tracking along with your students! i agree: avacado and nuts are wayyyy different than fast food and donuts. and so healthy and yummy – keep 'em, i say!

I like zucchini pasta and collard wraps, even though I haven't made wraps in a while. But I went through a phase for a while when I was making them with a curry carrot/celery pate that was really good.
I love cultured veggies but I buy them as a splurge and don't make them myself. I don't want my roommate to lose it! I've already pushed her out of her comfort zone with my dehydrator, sprouting bags, and potted herbs (even recycling!). I know that compost and cultured veggies would be taking it too far!

You probably can order it online. The caramel apple used to only be out in
the fall, but it must have been really popular b/c they have it all the time
now. I buy it at my grocery store (wegmans)—they also have a tea bar in
the store with a million types of unique teas. You'd probably enjoy that 🙂

I feel that way about stevia…I was using it 10 years ago, and everyone
thought I was nuts (it also had a weird aftertaste back then though)!
The dessert hummus does sound and look awesome. I think I need to try again
and not be so hasty about taking it out of the blender…I should have
tasted it and adjusted it—it just tasted too much like sweetened
chickpeas.

3. so is veggie pasta. I think you'd really like that one, especially with
my addition of garlic.
4. Miso is gross by itself (the smell is awful), but in stuff? Yum!

I was so happy when my bf agreed that it was a good idea to compost—and we
started storing our compost in bags in the freezer till we could go dump it
at my mom's once a week.
Cultured veg is definitely a splurge to buy! They are so ridiculously
expensive compared to what it costs to make them…
I usually eat all of my smoothies out of a bowl…I'm always disappointed
when they come out too thin 🙂

I think I need to try the hummus again—I think I didn't use enough stevia.
I'll do the taste test method next time. Everyone seems to love it so I must
have done something wrong since mine just tasted like sweet chickpeas!

The collards are actually less bitter than kale! Actually, I think putting
strong tasting things in the wrap made me not even notice the collard's
taste…just the crunchiness, which was really nice 🙂

Spaghetti squash is so awesome, isn't it? I love it with red sauce or with
pesto the most I think.
I made cultured veg once—and just used carrots and cabbage. It was sort of
bland tasting (and of course I made a ton of it)…Too bad we're not
“neighbors”—we could have a cultured veggie party, and you could help me
make it taste good!
how odd… i've always kinda thought miso smelled… earthy? i don't mind it. 🙂 and did i tell you i discovered the dashi i was using for miso soup has msg in it? so i've been on a soup hiatus… but i think i need to fix that and just find new dashi. and as for coming over… i hate being busy and can't wait until you live closer!
hmm dessert hummus, not so sure. and I remember using those programs in school to track intake and I would never make the requirements or be over, because they don't take into account where I'm getting my fat sources from!
Both recipes look great, especially the beautiful veggie alfredo! Wow, I love my raw desserts but I've never tried dessert hummus…it seems a bit strange to me since hummus in its traditional sense has garlic and eww, garlic in dessert? Lol! I would definitely try it once though. 🙂
Oh what pretty foods. It makes such a difference when foods look good. I find I have a much easier time sticking to diets/healthy eating habits when the foods are appealing and pretty. Great job on these photos!
Yum, I've never had anything too similar to collard wraps but they look super healthy and really tasty too! I don't know a thing about cultured veggies either…so I'm really looking forward to seeing what you do with them!

People I work with think I'm crazy for having veggie-loaded smoothies for breakfast. Because I eat so many fruits and veggies, I rarely worry about daily nutrient recommendation.
The wrap looks wonderful. So does the zucchini dish, that's one of my fave Gena recipes. I haven't tried a bean-based dessert dip yet, but flagged a few recipes to possibly try, so good to know your thoughts!
I do like veggies pasta, but I've been having problems finding zucchini large enough to spiralize. Can't wait until it's in season here. I'm also a fan of collard wraps, collard greens are also great in smoothies.
