Today my Mom came over for lunch and a walk. She’s been in Florida on vacation so I haven’t seen her in a while, and frankly, the older I get the more I realize how important it is to spend time with people who matter to me…no matter how busy we think we are. I’m lucky my Mom is so awesome 🙂
Aside from being awesome, she also is my biggest fan and always does exactly what I tell her to do in terms of wellness, heath, and food. Â She’s a wellness coach’s dream! Â We always have the best conversations, and she’s one of the few in the world I feel 100% like myself when I’m around. Today we chatted about things, and also contemplated how my career in the wellness field has really impacted her and Fred, and also Joe. These are people in my life who didn’t sign up for a wellness coach, but by being associated with me, they’ve reaped some benefits in the form of their health and wellness. Sometimes this happened on purpose, and sometimes just by association…or osmosis or whatever you want to call it!
Anyway, our salad:
Marinated shiitakes
Marinated zucchini pasta (made with a spiralizer)
Blanched Asparagus, squeezed with lemon and Herbamere and chilled
Kumquats!
Spring Mix w/ Herbs (organic, a Wegmans Specialty)
Cultured Carrots and Ginger
This salad was (a) beautiful (b) unique (c) delicious!
We didn’t use dressing—it didn’t need it with all those marinated things and the cultured veg.
It was simple, but noticeable. After our salad, we went on a 90 minute walk (Petra, we borrowed our regular long route), and then sat outside with my infamous Aloe-Lemon-Cooler for another hour, just chatting about things.
I’m learning lessons as I go through time—the current one seems to be that every minute doesn’t have to be productive in a work-sense. It feels great. And now I must go grade some papers!

That zucchini looks A-MAZING! Mom and I just planted ours today… so come our mid-summer harvest, I'll bring some over and you'll have to show me how the spiralizer works!
The zucchini pasta really is amazing—it's crazy how much a veg can taste like pasta. Definitely moreso when at room temp as opposed to when it's chilled. I highly recommend it!
We'll make a pasta dinner when your zukes are ready!
