These cookies are good, but this project made a gigantic mess—which is partly because of the nature of my 6 year-old helper, and partly because the “dough” is very crumbly until you form it into cookies.
If you like oatmeal cookies (and especially if you like your cookies on the doughier side—or if you’re like me and you might just like the dough better than the end products), you’ll love these! They taste great, and they really made me wonder why we could possibly need all the butter and sugar in standard oatmeal cookies—dates totally filled the bill!
Recipe:
2 cups oats
2.5 tsp cinnamon
process the first two ingredients
add 1 cup dates (pitted and not packed down)
1-2 Tbsp virgin organic coconut oil
process
add 1.25 cups raisins and pulse 7 or 8 times just to mix
Roll tablespoon (or so) sized balls and then press into shape of cookies. The dough will probably seem crumbly, but try forming a ball first–they ball-up quite nicely 🙂
If needed, add a few more dates.
Serve immediately or freeze/refrigerate.
